Easy BBQ Chicken Thighs on the Pellet Grill

This recipe adapts to the easy delicious chicken recipe by Heath Riles Classic BBQ Chicken on a Pellet Grill. Heath’s line of rubs is among some of my favorites. I own and use every rub and sauce he sells. Along with several others, I keep coming back to him time and time again.

Equipment

  • Pellet grill or smoker
  • Instant read thermometer

Ingredients

  • 8 Chicken thighs skinless, boneless
  • 4 oz Heath Riles Everyday Rub
  • 4 oz Heath Riles Honey Rub
  • 8 oz BBQ sauce

Instructions

  • Remove chicken from packaging and lay them out on a plate or pan. then place in the fridge to dry.
  • Season all sides really well with both the Heath Riles Everyday Rub and Heath Riles Honey Rub.
  • Set your pellet grill or smoker to 250ºF.
  • Smoke the chicken thighs for about 45 minutes flipping halfway.
  • Take the thighs off of the grill once their internal temperature reaches about 140ºF.
  • Increase your pellet grill temperature to 450-500ºF.
  • Baste the chicken with your preferred BBQ sauce and return them to the grill.
  • Grill the chicken for 5-7 minutes per side to caramelize the sauce.
  • Remove from the grill once the chicken reaches 165°F and serve warm.
