Equipment

  • Pellet grill or gas grill
  • Metal pan Steel, cast iron, stone, etc.

Materials

  • Pellets Apple, Maple, Hickory, Pecan, Oak, or Mesquite

Instructions

  • Place a heat-shielding surface, such as a metal pizza pan or pizza stone, onto the center of the lower grill rack.
  • Preheat your pellet grill to 425 – 450°F. Do this by following the steps for your specific pellet grill.
  • Remove plastic wrap and paper instructions from the pizza.
  • Once the pellet grill is pre-heated, place the pizza while still on its accompanying white cardboard tray onto the heat-shielding surface. Then close the lid.
  • Smoke for approximately 20 – 30 minutes. Smoking times will vary. Do not go far so that you can check the pizza frequently.
  • Turn the pizza a 1/4 turn every 5 minutes. The pellet grill should have good air circulation, but the radiant heat from the metal back, front, and sides of the grill can cook the pizza faster. Therefore turning the pizza often will help cook it more evenly.
  • Regularly check the pizza crust by lifting it with a spatula. Look for a nice golden brown color.
  • Once the pizza is done, use oven mitts to remove the pizza and heat shield. You can also use a pizza peel by sliding it under the cardboard and carrying the pizza off the grill, leaving the heat shield behind.
  • Let it stand for 5 minutes before you cut and serve.
