Smoked Cherry Chicken Wings with Cranberry Chipotle Citrus Glaze

Ingredients
24Chicken wingsdrumettes and wingettes
½cupCherry rubchoose preferred rub
FOR THE SAUCE
1tbspOlive oil
1Garlic cloveminced
1 canJellied cranberries
2½ cupOrangesjuiced
½Lemon juiced
1tbspBrown sugar
1tspJuice from chipotle in adobo saucejust the juice
1smallChipotle pepper, from can of adobo saucefinely diced
⅙Kosher salt
Instructions
FOR THE SAUCE
On the stove, preheat a small pan over medium-low heat. Once the pan is warm, add olive oil and garlic. Sauté until the garlic starts to brown, about 3 minutes.
Add the lemon juice, orange juice, and canned jellied cranberries to the pan and stir until it liquefies. Then add the diced chipotle pepper, adobo sauce, brown sugar, and salt. Stir to mix and bring the sauce to a simmer.
Simmer for about 10 minutes so the sauce can thicken. You can also do this in advance if you'd like.
FOR THE WINGS
Preheat the pellet grill or smoker to 275°F.
Pat wings dry and then rub them with olive oil. Now, gently sprinkle your cherry rub all over the chicken wings until they are well seasoned.
Place wings on the smoker's rack, ensuring they are not touching each other and have a little space between them to allow air circulation. Close the lid.
FLIP THE WINGS
After 30 minutes of cooking, flip the wings and smoke for another 30 minutes.
GLAZE THE WINGS
After another 30 minutes of smoking, bringing your total smoking time to 60 minutes, glaze the side of the wings facing up, flip the wings, and apply glaze on the other side.
Continue smoking for another 20 minutes or until the wings look ready to come off. They should have an internal temperature of at least 165°F but will probably be over.
